CHANDI KE BAR                                         2 adat                   
KHOYA                                                         200 gm                        
CHOTI ILAYCHI                                           6 adat 
ASHARFI                                                     150 gm                          
FOOD COLOUR                                          Red and green             
GHEE                                                           125 gm


MUTANJAN ( DULATTI ) KAISE BANAYE :-

Friends hume sela chawal ache vale lene hai or inhe 3 ghante bhigo ke rakhna hai , 3 ghante tak bhigo ke rakhne ke bad hume use boil kar lena hai or hume ilaychi ke sirf dane hi lene hai
Sabse pahle hum ek patile me ghee dalenge , jab ghee thoda garam ho jaye to hum usme ilaychi ke dane dalenge or fir hum isme chini bhi dal denge 
Chini ke sath hi hum isme takriban 200 gm pani bhi dalenge taki chini us pani me me pighal ke mil jaye , Friends agar hum pani nahi dalenge to hamari chini ka jalne ka khatra rahta hai
Jab chini pani me melt ho jaye to humne jo sela chawal boil karke rakhe hue hai vo bhi hum isme dal denge or ise takriban adhe ghante ke liye dum pe laga denge
Friends mutanjan har kisi se acha nahi banta hai kyuki logo se colour fel jata hai or iski vajah yeh hoti hai ki jab hum chawal dalte hai to chawal ko dum pe lagane se pahle hi hum chawal ke sath colour dal dete hai To hume colour nahi dalna chahiye 
pahle hume chawal ko dum pe lagana chahiye or jab pani bilkul sukh jaye uske bad hi hum usme food colour dalenge To pani felega nahi
Aksar logo ki yahi shikayat hoti hai ki unka food colour fel jata hai to uski vajah yahi hoti hai ki vo jab chawal ko dum pe lagate hai tabhi colour dal dete hai To us waqt food colour nahi dalna hai

Jab chawal ache se dum ho jaye or pani bilkul sukh jaye to hume food colour dalna hai humne jo red or green colour liya hai usme hume thoda thoda pani dalke ek taraf hi unke thode thode se drop dalne hai or iske bad hume ise fir se dum pe lagana hai 
Dum pe lagate time hi hum isme thode thode dry fruits khoya asharfi yeh tamam chize dal denge or 10-15 min tak dum hone ke bad hum in tamam ko ache se mix kar lenge
Mix karne ke bad hum isme jo baki bache hue dry fruits hai, khoya hai, asharfi hai, chamcham hai vo sab dal denge  
Bahut se logo ko white chamcham hi milti hai unhe colour vali chamcham nahi milti hai to vo log white chamcham ko bhi colour vali chamcham bana sakte hai
chamcham ko colour karne ke liye ek pyali me colour le or usme thoda pani dal le or fir aapne jo bhi 5-6 chamcham liye vo usme dal de or use 1 min tak dal ke hi rakhe uske bad use ek plate me nikal ke alag alag rakh le taki uska pani sukh jaye or iske bad aap is chamcham ko use kr sakte hai

Sabse pahle hum aalu ko boil kar lenge , Iske bad hume aalu ko mace kar lena hai or use bilkul barik kar lena hai , Iske bad shimla mirch , hare pyaz ke patte , namak , kali mirch , chinese salt , soya sauce yeh tamam masale hume aalu me dal dene hai or ise achi tarah se mix kar lena hai
Mix karne ke bad isko lambai me ya aap jis bhi shape me chahe us shape me cutlets banake rakh le
Iske bad hume ek fry pan lena hai or usme oil dalna hai , hume oil jyada nahi lena hai kyuki hume deep fry nahi karna hai , hume takriban adhi pyali oil hi fry pan me dalna hai or use low flame pe rakh le
Ab hume ek pyali me anda todke rakh lena hai or ek pyali me hume bread crums rakh lena hai , iske bad hume in cutlets ko ek ek karke pahle ande me dip kar lena hai fir bread crums me achi tarah se kar lena hai or iske bad hume inhe fry karna hai bilkul low flame pe 
Agar hum flame ko tej rakhenge to ispe jo bread crums hai vo jal jayenge , to is tarah se tamam cutlets ko hume fry kar lena hai or fir dish out kar lena hai

Friends hume chana dal ko thodi der tak bhigo lena hai
Sabse pahle hume ek patila lena hai or usme 2 glass pani dalna hai or uske bad hume dal chana jo humne bhigo ke rakhi hai vo dalni hai fir dal masoor, tamatar ,haldi, pisa dhaniya, pisi lal mirch or lehsun adrak ka paste yeh tamam chize dal deni hai or dal ko galne ke liye rakh dena hai 
Pahle hume chulhe ki flame ko full rakhna hai or uske bad hume flame ko low pe rakhke dal ko galani hai 
Thodi thodi der me hume isko chammach se hilate rahna hai  , chammach chalate time dal ghut jayegi or hamari dal ki ghutayi bhi ho jayegi
Dusri taraf hum chawal chadhayenge , friends chawal ko hume bhigo ke rakh dena hai 
Sabse pahle hum ek patila lenge or usme hum oil dalenge , iske bad hum usme white jeera dalenge , jab jeere ki khushboo aane lage to hum usme chawal galane ke liye takriban 2 glass pani dalenge 
Pani dalne ke bad hum usme chawal bhi dal denge jo ki humne bhigo ke rakhe hue hai or fir hum usme namak dalenge or chawal ko full flame pe paka lenge , Iske bad jab pani sukh jaye to hum chawal ko dum pe lga denge

Sabse pahle hume gungune pani me sugar ( chini ) or yeast ( khameer ) dalni hain fir hume ek thali me maida lena hain jisme hume use gundna hai or us thali me hume namak dalna hain or jo humne yeast or chini dalke pani rakha hain , to is kameer ke pani koo hume is maide me dalna hain or iske bad humne joo oil or anda liya hai vo bhi hume maide me dalne hain or fir us maide ko hume doodh se gund lena hain
doodh se is dough ko achi tarah se gundne ke bad hume is gunde hue maide ko ek bowl me nikal lena hain or is bowl ko kisi dhakkan ya fir kisi plastic se hume cover kar dena hain or fir is bowl ko takriban dedh se do ghante tak rakh dena hain taki yeh achi taraf se ful jaye or fulke double ho jaye

second me hume is dough ki filling ke liye jo chize darkar hain vo hai :

Sabse pahle hume ek fry pan lena hai or usme hume butter dalna hai jab butter thoda melt ho jaye ( pighal jaye) to usme hume pyaaz dalna hain pyaaz ko hume brown nahi karna hain bas hume pyaaz soft ( naram ) hone tak intezar karna hain 
jab pyaz soft ho jaye to usme hume maida dalna hai , doodh dalna hai , namak , kali mirch , garam masala  , chicken ( chicken ko ubalkar hume uska resha lena hain takriban ek se deh cup) , hara dhaniya or hari mirch Humne jo bhi masale liye hai vo sab usme dalke ise fry karna hain 
iske hume yeh karna hai ki humne jo pahle maide ko rakha tha jo ki abtak fulke double ho chuka hoga us maide ko hume nikal ke dobara se usme do char mukkiya lagayenge or fir halka sa dusk dalke chakle pe ya belan par jaha bhi aap is dough ko bel rahe hai vaha bhi dusk lagayene or ise rotiki tarah bele or isko hume ande vala shape dena hai or bich me filling rakhni hai or charo tarah sido se hume pattiyo ki tarah cutting karni hai jese ki ribbon hoti hai hume bilkul usi tarah se charo taraf se barabar barabar iski cutting karni hai

to sabse pahle hum aapko banana sweet banane ke liye jo chize hume darkar hai unke naam bata dete hai



INGREDIANTS :-

JELLY                                    2 packets  ( 1 red and 1 green )
BISCUIT                                1 packet
FRESH CREAM                    1 packet
CONSULT MILK                    1 dibba
BANANA                               2 darzan


MASOOR DAL PALAK  KAISE  BANAYE

Sabse pahle hume dedh cup pani ko ubalna hai aur usme jelly ka ek packet dalkar use usme jaldi jaldi mix karna hai jese hi jelly mix ho jaye to us jelly ko hume kisi bartan me , trey me ya plate me palat ke jamane ke liye rakh dena yeh jelly bina freez ke bhi jam jati hai isliye ise agar hum bahar bhi rakh denge to yeh jam jayegi 
Isi tarah dusri jelly ( jelly dusra ka packet) ko bhi hume jama lena hai
iske bad hume 1 darzan takriban 12 kele lene hai aur inhe chhil ke kisi chammach ya koi bhi chiz se inhe kuchalkar inka bilkul chura kar lena hain
Aur baki ke jo ek darzan kele humare pas bache hain unke hume gol gol pieces kat ke rakh lene hain
Iske bad ek trey leni hai aur jo humne kelo ko kuchal ke rakhe the unki hume teh lagani hain fir iske upar hume humne jo kele gol gol pieces me kat ke rakhe the unki teh lagani hai
Iske bad hume hamare pas jo 1 packet biscuit hai ( hume biscuit vo lene hai jo thode kadak ho ) usko mota mota kut ke bilkul chura kar lena hai aur fir uski bhi teh lagani hai 
Iske bad hume uske upar fresh cream dalni hai Fir hume cumel doodh dalna hai jise hum consult milk bhi bolte hai or ab hume humne jo jelly ke pieces kat ke rakhe the uski teh lagani hai

FIRST STEP INGREDIANTS :-


Mutton keema                                    500 g   machine me Kiya Hua bilkul baarik nikla hua
Hara dhaniya                                      adhi gaddi  
Pudina                                                adhi gaddi ( barik kata hua )
Lahsun adarak ka paste                   1/2  tsp
Pyaaz                                                  1 medium size ( barik pisa hua )
Hari mirch                                          8 adat ( barik kati hui )
Namak                                                swadanusar
Pisa hua garam masala                    1/2 tsp
Besan                                                 1 tsp bhuna hua
Adarak                                                1 small piece baarik kata hua

Sabse pahle hume keeme ko machine me dalkar bikul barik kake nikal lena hai uske bad yeh tamaam chizen jo humne aapko bataye hai sab hume keeme me dalna hai keeme me dalne ke bad hume yeh  tamaam Keeme ko ek baar aur barik pisna aur iske fir kofte banakar rakh lena hai


SECOND STEP INGREDIANTS :-

Aalu                                                      500 g
Oil                                                         1/2 pyali  ( 150 g )
Haldi                                                     1/2 tsp
Laal mirch                                            1 & 1/2 tsp
Namak                                                  swadanusar
Dhaniya powder                                  1 tsp

Sabse pahle ha yeh karna hai ki ek patile me hume oil dalna hai jab oil garam ho jaye to usme hume pisi hui pyaaz dalke use light brown karni hai uske bad hume usme lahsun adarak ka paste jo humne aapko bataya hai vo dalna hai tamaatar jo humne Grind karke rakhe hue hain uska paste vo bhi dalna hai , pisi hui laal mirch  , haldi , namak , dhaniya powder Yeh sbhi hum masaale me daal denge , tamaam masaale ki hume achi tarah se bhunayi karni hain , bhunayi us waqt tak karni hai jab tak ki oil upar aa jaye , masale ki achi tarah se bhunayi hone ke bad us masale me hume pani nahi dalna hai varna kofte tut jaate hain jo kofte humne banakar rakhe the un kofto ko aastha aastha us masaale ke andar rakh dena hai agar masala aapne bahut jyada bhun Liya hai or usme bilkul bhi pani nahi hai to usme bilkul thoda sa pani dal dijiye jyada pani dalne se kofte tut jate hain agar aapko lag raha hai masale me bilkul bhi pani nhi bacha hai to hi aapko thoda sa pani dalna hai
jab usi bhap ke andar h vo kofte sakht ho jaye tab usme aapko 1 glass pani dalna hai or humne jo aalu kaat kar rakhe hain vo bhi dalne hain galne ke liye ( humne aloo 500 g liye hai agar aap chahe to aloo 250 ya 300 g bhi le sakte hai )
